Basil Before It Fades
She needed basil for supper, but the leaves had wilted overnight. Her tomato sauce looked ready, yet tasted dull without fresh, peppery leaves. She used dried herbs that night and saved the limp bunch. After supper, she chopped the remaining basil with olive oil. She spooned the mixture into an ice tray and put it in the freezer. A few weeks later, one cube made another tomato sauce taste brighter. She has frozen spare herbs ever since, especially before busy weeks. Friends tried her trick after seeing the cubes melt into sauce. Now spare herbs wait in her freezer, ready to brighten a meal weeks later.
